Sorry i have been M.I.A. but you know how it is, with young kids, they keep you on your toes.. Well first off 4th of July is almost here so, in order to enjoy myself, i need to stay on point this next weeks. And it seems so hard now that the kids are home for vacation. One thing I am trying to do is keep busy.. and move. I wish I could take the kids Walking for hours but i live in the California desert, and that could be dangerous.. well wish me luck.. i will be back later to post some recipes..

Burrito bake

Made this tonight

Taco soup

My taco soup only 6 wwp+

1 lb of lean ground beef or turkey
1/2 onion
1 can of reduced sodium pinto beans
1 can of chili beans
1 can of corn
1 can of diced tomatoes with green chiles
1 can of mexican stewed tomatoes
1 package of low sodium taco seasoning
1 package of ranch dressing mix
1.5 cups of water

Brown meat and onion in deep pot. Once browned add water and seasonings. Let simmer for 5 minutes. Then add rest of ingredients. . Allow them to reach a boil. Occasionally stirring. Garnish with tortilla chips and slices of avocado

I been off for a while but now i am back... lol well i am down another 4 lbs.... it would have been more but i couldnt resist nachos and k fc.. But now i am back on track. I am starting my day with an egg white omelette. Only 5 points.

Ham and cheese omelette

2 egg whites or 3tbs of egg substitute
3 slices of Oscar Meyer delifresh ham
2 oz of reduced fat cheese of your choice

Very light and filling.. then you can have some reduced calorie toast

Good morning,  first off let me say. Yesterday we went Grocery shopping. Since I have kids of course we bought cookies, cheetos,  frozen burritos.. now the real challenge is not to grab one. I am starting my day with a banana and multivitamin cereal. ( I like multigrain cheerios, only 3 wwp+ ) Now off for my morning walk!

chicken tamale casserole recipe – 6 points +

Ingredients

  • 1lb skinless, boneless chicken breasts, cooked and shredded
  • 1 16oz package frozen corn, defrosted
  • 1 8oz box cornbread mix (I used THIS kind)
  • 1 cup reduced fat Mexican style cheese, shredded
  • 16 oz red enchilada sauce (I used 2 packages ofTHIS kind)
  • 1/2 cup fat free milk
  • 1 4oz can green chilies
  • 2 small jalapeƱos, seeded and diced
  • 1/4 cup liquid egg substitute
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400 degrees. Spray a 13 x 9 baking dish with nonfat cooking spray.
  2. In a medium sized bowl, combine, cornbread mix, corn, milk, egg substitute, green chiles, jalapeƱos, 1/4 cup of the cheese, cumin, paprika, and salt & pepper. Mix well, then pour into baking dish.
  3. Place in oven and bake for about 15 minutes. Remove from oven and poke all over, using a fork.
  4. Pour 1/2 of the enchilada sauce all over the top. Then evenly cover with the chicken. Pour remaining enchilada sauce over chicken and top with the remaining cheese.
  5. Return to oven, and cook for another 12-15 minutes, or until the cheese is golden and bubbly.
  6. Let cool for 5 minutes before serving.

             Tuesday is my nickname Heather is my legal name, but I do not like to be called that...
           Today I have been doing good, I didn't get my work out in but i kept myself busy, so i did not eat out of boredom!   YAY!!!! My Weight Watchers daily allowance is currently 38 points. i have only used up 8 and i am halfway through the day. However my stomach is growling so i guess i am going to eat some progesso soup and cucumbers with lemon and tajin salt.. by the way progresso light soup is only 2 points a serving, throw in some saltine crackers a whole lunch is 4 points ( you do not count the cucumber)
          This is just the way i feel sometimes.. Especially when your children are eating mac and cheese with corndogs

Hello my name is Tuesday!

        First let me start off by introducing myself, my name is Tuesday. I am a single mother of 4 children ages !5, 14, 8, and 2. I have been struggling with my weight my whole life. It is fair to say I have never been skinny. I am 5'11 and have weighed between 200 lbs all the way to 306lbs through out my adult life. When i began this weight loss journey back in November of 2013, I was 283, as of my last weigh in I am currently at 243. I have been doing the weight watchers diet, and some exercising. I am not perfect. I have my days where i slack off and go over my points but I refuse to give up! I find it especially hard to stick to my diet when my kids are still eating the high carb junk we all love so much... That is why I am starting this blog to give myself some accountability, and to invite anyone who would like to join me in my journey. Feel free to posts recipes, tips ideas or just vent out your struggles. we all have to start somewhere...
